Stone Bake’s Pimped Up Eggs On Toast

A pimped up version of the classic, eggs on toast! Adding spinach, artichoke and Roquefort cheese gives a delicious, rich twist on this classic breakfast dish!

You’ll need:Ā Egg Toast Stone Bake

  • 1 loaf of sourdough bread (cut into 1 inch slices)
  • Some large eggs (1 per person or 2, if you’re really hungry)
  • Fresh spinach
  • Artichoke hearts
  • Roquefort cheese
  • Olive oil
  1. Drizzle a large cast iron pan or tray with the olive oil and place in the residual heat of your wood fired oven. Grab your slices of bread and carefully place them into the pan turning them from one side to the over to ensure even coverage of the olive oil. Place your thin slices of cheese over the slices of bread, 2 artichoke hearts per slice and top with the spinach leaves.
  1. Place your cast iron pan back into the oven until the bread is golden brown and the cheese has slightly melted. Make sure meanwhile that you’ve poached your egg and it’s ready to place on top of your fully loaded pimped up toast to serve! SCRUM!

Stone Bake’s Feta Cheese French Toast

Got to love the classic, French toast! Simple, easy and delicious… 

You’ll need:French-Toast-Savory-Diethood

  • 1 loaf (16-oz.) stale French bread, sliced into 1-inch thick slices
  • 3 tbsp olive oil
  • 250ml whole milk
  • 3 large eggs
  • 1 tsp fresh thyme leaves
  • Ground pepper, to taste
  • 230g and an extra 150g crumbled feta cheese, divided

 

  1. Drizzle the olive oil in a cast iron cooking tray/pan and place in the residual heat of your wood fired oven.
  2. In a mixing bowl, whisk together milk, eggs, thyme, pepper and the 230g of crumbled feta cheese until completely blended.
  3. Dip each slice of bread into the egg mixture, covering all sides, and scooping up bits of feta cheese from the bottom.
  4. Transfer each bread slice to tray and cook on both sides until golden; about 1-1/2 minutes per side. Add more olive oil as and if needed.
  5. Remove each slice and place on paper towel to soak up excess fat.
  6. Sprinkle toast with remaining crumbled feta cheese, a few fresh sprigs of thyme and serve hot, hot, hot!

St Patrick’s Day Pizza Party!

What better way to celebrate St Patrick’s Day than a pizza party with some Guinness thrown in for good measure! We have the perfect pizza toppings to get that Leprechaun in you jumping for joy! Read on to learn more…

The Guinness

This marvellous pizzette creation is perfect for a pizza party with bite-sized pizzas full of Irish flavour!

  • 2 tsp of butter
  • 1 yellow onion
  • 455g of mushrooms
  • ½ tsp. granulated sugar
  • 1 tsp. kosher salt
  • ¼ black pepper
  • 180ml of Guinness
  • 1 tsp. fresh thyme
  • 225g of Irish cheddar cheese
  • 1 tsp. extra virgin olive oil
  • Balsamic vinegar

 

Start by firing up your wood fired oven to its optimum temperature of 450°C and then allow heat to even out and maintain above 400°C. For more information, please refer to our Cooking Techniques Guide.

In a large pan over a medium heat melt the butter. Slice the yellow onions and add the onions to the pan with the sugar and sautƩ the onions for 10 minutes. Slice the mushrooms and add them to the onions and season. Saute for another 5-10 minutes.

While the onions are cooking prepare the dough. Separate a ball of dough from your earlier preparedĀ Stone Bake Dough, you can choose your preferred size of the dough ball depending on what size pizza you wish to make.

Lightly dust your Surface with some flour and start to roll out your pizza base then using a cookie cutter cut the dough into circles. Transfer your pizza base to your Wooden Pizza Peel which is also lightly dusted.

Once the onions and mushrooms have caramelized, add in the beer and thyme and continue to cook the mixture until it has thickened and the beer is absorbed.

Spoon the mixture onto the pizzettes and top with some Irish cheddar cheese.

Once you have placed your pizza in your Stone Bake Oven it will take around a minute to cook at optimum temperature, keep your eyes on the pizza, as failing to turn regularly will result in slightly charred edges, once you have a consistently browned crust and topping, remove from the oven with your Aluminium Pizza Peel and slice to serve.

Finally, drizzle with balsamic vinegar and serve.

The Potato

 

Potatoes are Ireland’s staple food and why not add it to a pizza? You are probably thinking carb overload but we are thinking don’t knock it ā€˜till you’ve tried it!

  • 6 slices thick bacon
  • 3 leeks
  • Extra virgin olive oilĀ 
  • 5 small red or gold potatoes
  • 455g fresh mozzarella cheese
  • 115g crumbled goat cheese
  • Kosher saltĀ 
  • Freshly ground black pepperĀ

Start by firing up your wood fired oven to its optimum temperature of 450°C and then allow heat to even out and maintain above 400°C. For more information, please refer to our Cooking Techniques Guide.

Cut up the bacon and then cook over a medium heat until cooked. Set aside.

Slice the leeks thinly and add them to the same pan sautƩing them for approximately 3 minutes. Set aside and then slice the potatoes thinly.

Separate a ball of dough from your earlier preparedĀ Stone Bake Dough, you can choose your preferred size of the dough ball depending on what size pizza you wish to make.

Lightly dust your Surface with some flour and start to roll out your pizza base until you reach the desired size/shape. Transfer your pizza base to your Wooden Pizza Peel which is also lightly dusted.

Add the potatoes in a single layer all over the dough and then dot the mozzarella slices over the dough too. Add the leeks and then sprinkle the bacon pieces over the top making sure to add the goats cheese.

Once you have placed your pizza in your Stone Bake Oven it will take around a minute to cook at optimum temperature, keep your eyes on the pizza, as failing to turn regularly will result in slightly charred edges, once you have a consistently browned crust and topping, remove from the oven with your Aluminium Pizza Peel and slice to serve.

 

The Shamrock

 

The Shamrock is the most notorious emblem of Ireland so what better way to tie it into a pizza party than cover your pizzas with it?!

  • 340g grated part-skim mozzarella cheese
  • 170g baby spinach
  • 115g part-skim ricotta cheese

Start by firing up your wood fired oven to its optimum temperature of 450°C and then allow heat to even out and maintain above 400°C. For more information, please refer to our Cooking Techniques Guide.

Separate a ball of dough from your earlier preparedĀ Stone Bake Dough, you can choose your preferred size of the dough ball depending on what size pizza you wish to make.

Lightly dust your Surface with some flour and start to roll out your pizza base until you reach the desired size/shape. Transfer your pizza base to your Wooden Pizza Peel which is also lightly dusted.

Cut the spinach into clover shapes to achieve the Shamrock look. Add your desired amount of shredded mozzarella and ricotta and then dot around the spinach leaves on the pizza dough.

Once you have placed your pizza in your Stone Bake Oven it will take around a minute to cook at optimum temperature, keep your eyes on the pizza, as failing to turn regularly will result in slightly charred edges, once you have a consistently browned crust and topping, remove from the oven with your Aluminium Pizza Peel and slice to serve.

Wood Fired Grapefruit and Sugar Rubbed Pork Tenderloin

This recipe is a heavenly combination of sweet and savoury. The succulent pork is rubbed with a sugar and grapefruit concoction, which is what makes this dish stand out!

  • 8oz packed dark brown sugar
  • 1 tbsp.Ā smoked sweet paprika
  • ½ tsp.Ā ground cumin
  • ½ tsp.Ā ground fennel
  • ¼ tsp.Ā cayenne
  • 5 clovesĀ garlic, peeled
  • 2 grapefruit, 1 pink or red grapefruit and 1 white, zested andĀ supremed
  • Kosher salt and freshly ground black pepper, to taste
  • 1 (1½-lb.)Ā pork tenderloin

 

Start by firing up your wood fired oven to its optimum temperature and allow the oven to cool down and maintain the temperature at 230 degrees C. For more information, please refer to our Cooking Techniques Guide.

 

Purée sugar, paprika, cumin, fennel, cayenne, garlic, grapefruit zest and segments, plus salt in a food processor until very smooth; transfer to a large bowl. Add pork and toss to combine; cover with plastic wrap and let sit 15 minutes at room temperature. Transfer pork to a cast iron tray fitted with a wire rack; cook until slightly caramelized on the outside and an instant-read thermometer inserted into the pork registers 140°, about 45 minutes. Let pork rest 10 minutes before slicing.

Polpette Opens Second Wood Fired Pizza Restaurant

Polpette now has two local restaurants located in Canford Cliffs and more recently Southbourne Grove! We are very proud to say that each restaurant houses our very own Gozney professional commercial ovens. Polpette serves authentic Neapolitan pizzas, which are topped with the very finest, fresh, seasonal ingredients sourced in the UK and Italy. The slow rising sourdough pizzas are cooked in our commercial wood fired oven by an artisan ā€˜pizzaioli’ from Naples and are ready to serve within minutes.

 

I’ve not spoken to a single person who has anything negative to say about their dining experience at Polpette. People all over Bournemouth are raving about the pizza. TripAdvisor comments include

– ā€œThe best pizza I’ve ever had, seriously!ā€, ā€œStaff were very friendly and attentive and more importantly the food surpassed my expectations.ā€

After experiencing Polpette dining for myself a few weeks ago, it is safe to say that all the positive feedback is 100% well deserved. The Southbourne restaurant was small but atmospheric and the food was simply excellent. I started with a peach Bellini cocktail accompanied by their wood fired king prawns with chilli, garlic and olive oil. Being a seafood lover I am pretty picky about prawn dishes but they were a decent size and the dish was seriously delicious! To follow for main I of course had to sample the pizza. With an array of choice, it was hard to select just one – they all sound amazing! After much deliberation I went for the Portobello and wild mushroom pizza with parmesan, mozzarella, and basil on a Bianca base drizzled with truffle oil. Of course I am slightly bias but working at Stone Bake I’ve been lucky enough to sample the delights of fresh, authentic wood fired pizza so naturally there wasn’t much doubt in my mind that theĀ pizza was going to be cooked to perfection at Polpette.

The Edible Garden Show 2015

This blog is for all the ā€˜grow your own’ fanatics out there and you know how we love to encourage you all to use and cook with seasonal fresh produce. There’s nothing quite like it, especially if it’s been grown by yourselves!

The Edible Garden Show is coming back to Alexandra Palace, London from 20-22 March 2015 providing it’s visitors with everything they need to #getreadytogrow and with their new “shop and drop” service you can buy whatever you need there on the day!

The Edible Garden Show is a gardening expo that will be a huge gathering of celebrity gardeners, chefs, experts and exhibitors offering a wide range of gardening products. This event will cater to the sectors of growing fruits and vegetables as well as poultry keeping. This event will be of equal interest for seasoned gardeners as well as those who are starting a fresh in this industry. The Edible Garden Show will help the exhibitors to establish their brands and reach thousands of visitors who are interested in growing their food at home, keeping livestock and cooking meals with the produce. This event was a roaring success in its last edition when thousands turned into the event.

February Oven of the Month

We are delighted to announce that David Spencer’s Mezzo 76 is this month’s oven winner!
