
Quick and easy, these rustic sweet treats are perfect to pop in your Stone Bake oven and enjoy with a cuppa on a cold day.
Makes 10 to 12 Cakes
- 225g Self Raising Flour
- 1/4 tsp. Salt
- Pinch mixed spice
- 85g butter
- 85g caster sugar
- 85g Sultanas or Mixed Fruit
- 1 large egg lightly beaten
- 2 tbsp. Milk
- Demerara Sugar.

Method:
Sieve flour, salt and mixed spice together. Rub in the butter until a breadcrumb consistency is achieved, then add the sugar and sultanas. Mix the egg and milk together then pour into the dry mixture. Thoroughly mix with a fork to a stiff, rough dough. Put 12 spoonfulโs of the mixture onto a baking sheet, see our Cookware section,ย rough up with a fork and sprinkle each one with a little Demerara sugar.
Bake for 10-12 minutes or until golden brown. Remove from the oven, let them stand on a wire rack for five minutes to cool and then serve. Yum!
